Lions Mane, also known as Pom Poms, Monkeys Head, or Bearded Hedgehog mushroom is a beginner friendly mushroom to grow, so do not be intimidated!
HOW TO GROW:
Option 1: Puncture a small hole near the top of the bag to deflate the air inside. Fold your bag and lie it on its belly side then wrap a rubber band(s) around it to hold it air tight. Cut 1 inch slits using a knife or scissors on the left side, the right side, the front side, and the back side for a total of 4 slits. (The more slits you put in, the more lions mane fruits you get, however, the smaller each one will be).
Allow 7-10 days for the mushroom mycelium to start forming outside of the bag. At this stage in its growth, you may want to spray to cut sites once a day for the next 2 weeks. Over the next 2 weeks the lions mane will continue to grow. The mushroom is ready to harvest once it looks like the ones in the picture.
IMPORTANT FACTORS:
TEMPERATURE: Keep anywhere from 60-75 degrees fahrenheit
LIGHTING: Keep out of direct sunlight! If you are going to fruit these outside, put them in a shaded area. If you are putting them inside they do not need any special lighting, any ambient lighting will do with minimum recommended exposure being 4 hours a day. You don't want to keep in total darkness,
Option 2: Fold your bag and lie it on its belly side. Wrap your rubber bands around it to hold it air tight. Cut one large diagonal slit across the the front of the bag to receive one massive fruit. It is very possible to receive a fruit that weighs up to 4 lbs on the first flush!!
After harvesting this flush, you may try the same process on the back side of the bag to receive a second harvest. (Note that this fruit may be significantly smaller or may not produce at all depending on how much was grown the first flush.)
The typical yield for this species off of this substrate is 2-4 pounds, but sometimes, more. Harvest ready in about 2-3 weeks.
TIP:
Keep the opening moist where you have the slits and monitor closely so the mushroom block doesn't dry out. If you would like, you can use a spray bottle of water to keep the inside of the bag moist, though this is not always necessary. Temperature range for successful fruiting occur from 60-70 degrees Fahrenheit.

TIP:
The main goal to be successful in this pursuit is to monitor the moisture content of the substrate. The key being, not to dry and not too wet, but rather somewhere in between (better too wet, than too dry). This may require you to spritz the opening of the bag daily if cultivating it indoors. If cultivating the mushroom outdoors then the natural humidity of the outdoors mixed with rainfall should be enough to suffice successful fruiting of this mushroom. BE CAREFUL not to expose this mushroom bag to direct sunlight. Keep in a shaded area that receives no direct sunlight.

A delicate, yet absolutely stunning mushroom. This is one of my personal favorites to watch grow and enjoy the fruits of. The flavor is delicious when consumed fresh and incredibly easy to work with. Sauteed in butter and cooked to crispy perfection, there is little that compares with this mushroom. Available late spring-early fall.

The flavor of the pink oyster mushroom has been described as meaty and fishy. Just like most mushrooms, it is quite umami. Its texture is both meaty and chewy. When fried until crispy, it resembles pork or even chicken. However, when it is raw, it has a sour taste. Available late spring-early fall.

**This is an intermediate grow. Therefore, this is not recommended for your first attempt at growing mushrooms at home. We recommend another variety to get you oriented to some of the basic concepts into the world of mushroom growing first and once you succeed with those then this is LEVEL 2.**
HOW TO GROW:
a) Entirely remove the brick from the bag
b) Soak the brick by submerging underwater for ~4 hours. Since shiitake grow bricks are naturally buoyant, it may be required to put a small weight on top of it to keep it submerged. Also note, that the shiitake grow brick soaks up water, so fill a few inches above the brick.
c) The brick will fruit once taken out of the water after about 1 week. You may simple leave it to rest and you will get some fruits. However, if you want to get a bountiful, lush fruiting, then it is suggested you follow the following tips.
After 2 "flushes" it is possible to get a 3rd fruiting if you want to get a few more mushrooms, however, yields were diminish and become susceptible to molds.

TIP:
Keep the humidity of the surrounding area of your brick high. This is achieved by putting the brick in a container of sorts, such as a tupperware container or plastic storage bin. You may use aquariums or even plastic bags. Anything that walls off the outside drafts and keeps the moisture contained within the immediate environment will suffice. It is also recommended that you keep air going in the room that it's in. These bricks produce over 1 pound on the first flush if done properly and may be rehydrated (repeat step B) after your first harvest and grown a second time! The second flush can achieve an even greater yield.

2) Cut a slit using a knife or scissors on the marker line provided to you
3) Make sure the temperature is no warmer than 70 degrees Fahrenheit, with 60 degrees being preferred if possible.
4) Put the block into a container to keep humidity levels high. This block takes about 3-5 weeks to fruit, so drying out tends to be the main issue with failed attempts. This container may be an aquarium, a storage container, a plastic bag, etc. Monitor your block every few days to make sure that it is not drying out. If you find it is drying out, mist it with a spray bottle of water daily until moisture is maintained and balanced again.
5) Be extremely patient with this one and do not give up! The substrate ay take a white to fruit, however, it will not mold or attract insects so there is no harm being done in waiting. The wait is totally worth it. This is one of the most fascinatingly beautiful mushrooms to grow and so enjoyable to cook and work with. It is best when fresh, so by doing the due diligence in growing it yourself, you are treating yourself with top notch gourmet food item with the cinnamon cap (aka chestnut) mushroom.
